When completely ripened, the grapes are collected in containers and crushed while trying to keep the fruit as uncontaminated as possible.This is followed by fermentation of sugars in steel vats at temperatures between 28-30°. Malolactic fermentation takes place 30-40 days after devatting. Ageing takes place in steel vats for 8 months and in bottles for 9 months before their release.
An elegant wine with medium age, intense ruby red colour. Delicate but persistent aroma found typical of Barbera, with hints of cherry and plum. Surprising on the palate with a mix of strength and elegance, dominated by balance and smoothness.
Suitable with most courses of the meal, from hearty hors d'oeuvres to meat based entrées and main courses, to fresh and aged cheeses.
