Martinotti/Charmat method with temperature controlled fermentation in autoclaves in contact with specially selected yeasts, plus secondary fermentation.
CHARACTERISTICS:
Straw yellow with bright greenish highlights. Elegant, with a refined and persistent mousse, fine effervescence, subtle and lasting perlage, ample bouquet, and full and fragrant flavour.
PAIRINGS:
Pleasantly dry, perfect as an aperitif and matches well with many national and international dishes, including fish based recipes.
